Chimay beers are brewed by trappist monks in the classic Belgian style. These guys have been around since the 1800's and know what they're doing. These are fanastic beers, although more special-occasion beers than daily drinkers (unless you're from Europe, in which case you probably love this stuff).
Anyways, if you've never had a Belgian beer before they are really different. Not compatible with hoppy American-style beers like Sierra Nevada or Anchor Steam unless you want to revisit what you've been drinking all night.
Chimay is one of the Trappist breweries, along with Westmalle, Westvleteren, La Trappe, Orval, Rochefort and Achel.
